Friday night sips and snacks!
I love Friday nights! It's the end of the working week and the whole weekend is ahead of us – what's not to love! Friday night celebrations look a bit different since I left Sydney for Boyne Island but they can still be just as enjoyable nonetheless, and there's no reason they can't be a little more on the healthy side.
This week I collected a decent little crop of tomatoes from my garden. So, in celebration of the first week of spring, with summer just around the corner, I'm making this delicious homemade tomato and cucumber salsa to go with a refreshing coconut, lime and mint cocktail.

TOMATO & CUCUMBER SALSA
There's no hard and fast rules with this recipe! If you love coriander – add more! If you're not big on a lot of onion – use a little less.
Makes about 2 cups of salsa
2 tomatoes
1 small (Lebanese) cucumber
1 small red onion
1 bunch coriander
1 lime, juiced
Drizzle of olive oil
Salt and pepper
Dice the tomatoes, cucumber and red onion into small pieces and place into a small mixing bowl. Chop coriander finely and add to mixing bowl with lime juice and a small drizzle of olive oil. Stir gently to combine and season with salt and pepper.
Place in a pretty bowl and serve alongside corn chips – easy peasy!
TIP: Be careful to cut the tomato, cucumber and onion into a neat, small dice so that the salsa is easy to scoop onto your chips.
REFRESHING COCONUT, LIME & MINT COCKTAIL
Makes 3 cocktails
2 limes, juiced
1 can coconut water (310ml)
2 cups ice
10 mint leaves
2 shots Malibu
Blend all ingredients in a blender and serve with a sprig of mint and slice of lime.
TIP: This cocktail makes a great post workout electrolyte elixir – minus the Malibu of course!
